tahini caesar dressing

2 cloves of garlic

juice (and zest) from 1/2 lemon

1/3 cup (80ml) tahini

1/3 cup (80ml) water, more as needed

3 heaping tbsp nutritional yeast

1 heaping tsp dijon mustard

1 tbsp apple cider vinegar

2 tsp capers (optional)

1 tbsp soy sauce

black pepper to taste

salt as needed

method:

whisk or blend together all of the ingredients (mince the garlic and capers finely if not blending). add more seasonings to taste.

great with a salad: lettuce, parsley, dill, cucumber, scallions, crispy chickpeas or tofu;

or in a wrap, as a pasta salad dressing or simply to dress up your sandwich.
