steel-cut oatmeal

quite time-consuming, but very worth it in my opinion. the texture is so good. perfect for a weekend breakfast.

for 1 serving:

2/3 cup (70g) whole oats

pinch of salt

1 cup (250ml) soy milk

1,5 cups (375ml) water, more as needed

pinch of salt

method:

soak the whole oats overnight.

drain and rinse, then add to food processor and pulse a few times to roughly chop the grain.

add the oats to a non-stick pot. add the salt, soy milk and water and bring to a boil.

reduce the heat to low and simmer for 35-45 minutes, stirring occasionally. you will need to add more water eventually, so keep an eye on it.

after the cooking time, stir in your desired mix-ins (cacao powder, fruits, syrup…) and serve.
