coconut ginger tofu
for 2 servings:
2 blocks of tofu, pressed
1 tbsp cornstarch
1 can coconut milk
1/2 tsp turmeric (for colour)
chili flakes to taste
grated ginger (I grate 30x with a microplane)
salt & black pepper to taste
method:
cut the tofu into large cubes and toss with cornstarch. bake at 200°C for 15 minutes.
in the meantime, add the sauce ingredients to a large pan and simmer until the tofu is cooked.
add the tofu into the pan, mix well and serve.
delicious with rice, cucumber, pickled red onions and parsley.
