spaghetti AOP

not a new recipe by any means, but so quick and delicious. add protein or veggies on the side for a complete meal.

for 1 serving:

as much pasta as your heart desires

2-3 tbsp extra virgin olive oil

2-3 cloves of garlic, minced

handful of fresh parsley, finely chopped

chili flakes to taste

method:

cook pasta in salted water for 2 minutes less than package instructions.

heat the olive oil in a large pan, and fry the garlic for 2-3 minutes until golden, ensuring not to burn. add chili flakes, fry for another minute.

once pasta is cooked a little less than al dente, it’s best to transfer it straight to the pan using tongs. otherwise, drain and save the pasta water. do not rinse.

add a ladle of pasta water to the pan, along with the fresh parsley. finish cooking the pasta in the sauce. it will become emulsified and creamy.

serve immediately.
