shawarma chickpea & rice salad

1 can chickpeas

1 tbsp shawarma paste

pre-cooked rice

2 mini cucumbers

handful cherry tomatoes

1/2 red onion

handful fresh mint or parsley

dressing:

2 tbsp almond butter

1/3 tsp cumin

1/3 tsp ground coriander

1/4 tsp chilli powder or chipotle

pepper to taste

1 tbsp soy sauce

juice from 1/2 lemon

method:

combine the chickpeas and shawarma paste. roast at 220°C for 15-20 minutes.

in a large bowl, combine the rice, veggies and herbs. mix the dressing ingredients together.

once the chickpeas are crispy, add to the salad bowl and stir through the dressing. season to taste with salt.
