caramelised onion & balsamic pasta

2 medium sweet onions

pinch of sugar

2 tbsp balsamic vinegar

pasta of choice

salt as needed

fresh basil

extra virgin olive oil, for serving

method:

slice the onions thinly and fry in oil. add a pinch of sugar to speed up the caramelisation process. after 15-20 minutes, the onions should be soft and golden. I recommend not eating half of the onions while they are cooking, not speaking from personal experience of course.

cook the pasta according to the package instructions.

to the onion pan, add the balsamic vinegar and turn up the heat to medium-high.

drain the pasta and reserve the pasta water. add the pasta into the pan, along with pasta water and stir for 1-2 minutes until emulsified. season with salt as needed.

stir in the basil, serve immediately. drizzle with extra virgin olive oil.
