miso chickpea & avocado smash
for 1 big or 2 smaller sandwiches:
200g chickpeas
1/2 large avocado
1 tsp miso
cayenne pepper, to taste
salt
juice from 1/2 lemon
grainy mustard
lettuce
method:
in a food processor, combine chickpeas, avocado, miso, cayenne, salt and lemon juice. pulse a few times, add a small splash of water if needed. season to taste with more salt or cayenne.
add on some bread with mustard and lettuce, or any other toppings you like.
