lemon dill tofu

1 block (200g) tofu

zest from 1 lemon

juice from 1 lemon

small handful fresh dill, chopped

1 tbsp chopped capers, chopped

big pinch of salt

1/3 tsp sumac

1/3 tsp smoked paprika

chili flakes, to taste

2 tbsp olive oil

method:

cube the tofu.

mix the marinade ingredients in a container, add the tofu and marinade for at least a few hours, ideally overnight.

transfer the tofu (without the extra marinade) onto a baking sheet.

bake at 200°C for 20-25 minutes, until golden brown.

serve with rice, veggies and the leftover marinade on top.
