chocolate cornflake jars

a great lighter breakfast or snack. easy to prep and keep in the fridge for the week.

for 2 jars:

frozen blueberries (defrosted)

plant-based yogurt

100g lightly sweetened cornflakes, divided

5-6 squares dark chocolate

1 tsp coconut oil

flakey salt

method:

to the jars, add a layer of blueberries at the bottom. top with yogurt and half of the cornflakes.

build a double boiler by adding water to a small pot over the stove, and adding a large heat-proof bowl on top. add the chocolate and coconut oil and stir until melted, then stir in the other half of the cornflakes and mix well.

divide the chocolate cornflakes between the two jars, sprinkle a little flakey salt on top and set in the fridge for 10 minutes to set. the chocolate will create a shell which is fun to destroy.
