chili lemon oven pasta
for 1 serving:
1 bell pepper
2 medium red onions
200g chickpeas
zest from 1 lemon
1/3 tsp smoked paprika
1/2 tsp dried oregano
chili flakes to taste
1/3 tsp salt
pepper to taste
fresh parsley
juice from 1/2 lemon
cooked pasta
method:
add the sliced bell pepper and red onion, chickpeas, lemon zest and spices into a large baking dish.
drizzle over 2 tbsp of extra virgin olive oil and mix well. bake at 230°C for 20-25 minutes.
in the meantime, cook the pasta.
once the veggies are roasted, add the pasta, parsley and lemon juice straight to the baking dish and mix. the lemon and oil will create the sauce. season to taste with salt.
