chickpea salad sandwich

this is an old favourite of mine. if you prep the chickpea salad ahead of time, lunch is ready in 5 minutes.

for 2 sandwiches (or 1 + more filling):

1 can (240g) chickpeas, drained and rinsed

1 heaping tbsp tahini

1 tbsp thick soy yogurt

big pinch of salt & pepper

2 pickles, finely diced

1/2 small red onion, finely diced

(sweet) mustard

lettuce

sprouts

method:

mash the chickpeas with a fork (when making a big batch, I usually pulse them in a food processor). add the tahini, yogurt, salt, pepper, pickles and red onion and mix well. season to taste.

grab your favourite bread and add a layer of (sweet) mustard, a big dollop of the chickpea salad, lettuce and sprouts.

i usually wrap my sandwiches up to make eating easier, or serve them open-faced to eat with knife & fork.
