bircher muesli
ever since coming back from switzerland in 2023, I have been going through bircher-muesli-phases. it’s such a great breakfast - easy to prep, high in protein and fibre, and most importantly, very delicious. customise to your liking.
for 3 servings:
2 cups (200g) rolled oats
big pinch of salt
6 tbsp seeds of choice (I like flax & sunflower)
1 large carrot, grated
1 large apple, grated
1-2 tbsp sweetener of choice
1 container (400g) thick plant-based yogurt
1 cup (250ml) plant-based milk
optional: cinnamon / vanilla / raisins
method:
grate the carrot and apple in a large bowl before adding the rest of the ingredients. mix well.
set in the fridge for a few hours or overnight. garnish with desired toppings and extra milk for creaminess.
keeps well in the fridge for 3-4 days.
