the ultimate spring salad

200g frozen peas

1 can white beans

1/2 small head of fennel

2 radishes

1 mini iceberg lettuce head

very small handful each dill, parsley, chives

dressing:

2 tbsp white wine vinegar

2 tbsp extra virgin olive oil

1 tsp dijon

salt & pepper

method:

slice the vegetables thinly and chop the herbs.

combine the dressing in a jar and shake to emulsify.

add the salad ingredients into a large bowl, pour over the dressing and mix. season to taste with more salt.

serve with crusty bread for a full meal.
