tofu, pineapple & pickled onion baguette

for 1 small baguette:

1/2 medium avocado

1 heaping tbsp vegan mayonnaise

1 block of tofu

tofu marinade:

2 tsp soy sauce

2 tsp sesame oil

2 tsp apple cider vinegar

black pepper, to taste

2 slices of fresh pineapple

pickled red onions

4 leaves of lettuce

small handful fresh parsley

salt, to taste

1 small baguette or ciabatta

method:

cut the tofu into thin slices, the thinner the better. marinade ahead of time, ideally overnight. then fry the tofu in a pan, in batches if needed, until slightly golden but still soft. add remaining marinade to the pan once cooked.

cut the pineapple slices in half, creating half-moon shapes.

cut open the baguette and smash the avocado onto one half, the mayonnaise onto the other half. place the fried tofu on top, followed by the pineapple slices. sprinkle the pineapple with salt.

top with pickled red onions, the lettuce and parsley and close the baguette.
