spicy slaw
for 4 servings as a side:
1 small head cabbage
1 large carrot
big handful fresh parsley
handful fresh mint
2 scallions
1 mango
dressing:
2 cloves of garlic
1 small chili, I used a habanero
2 tbsp sesame oil
2 tbsp maple syrup
2 tbsp soy sauce
juice from 2 limes
method:
julienne / mandolin / chop the vegetables and add to a large bowl. sprinkle with salt and toss roughly.
add the dressing ingredients to a blender and blend until smooth. feel free to omit the chili or add half.
pour dressing over the cabbage salad and massage for 1 minute until the cabbage starts to break down. rest for 5 minutes before serving.
keeps well in the fridge for 4-5 days.
delicious with rice, tofu and a drizzle of tahini, in a wrap, rice paper rolls or tossed with soba noodles.
