peanut butter banana breakfast muffins

perfect to prep ahead and keep in the freezer for a quick breakfast or snack.

for 8 muffins:

3 large bananas, mashed

2 tbsp flax seeds + 2 tbsp water

90g peanut butter

70g maple syrup

vanilla to taste

200g flour, or a mix of oat flour & flour

1 tsp baking powder

1 tsp baking soda

pinch of salt

choc chips

toppings: rolled oats, choc chips

method:

in a large bowl, mash the bananas. add flax eggs, peanut butter, maple syrup and mix to combine. add the remaining ingredients excluding the toppings and mix until just combined.

divide between 8 muffins liners.

top with oats and more choc chips for garnish and bake at 180°C for 25min.

for a full meal, serve with yogurt, fruit and seeds.
