orange soba noodle salad

perfect for a quick lunch or taking on the go, this soba noodle salad packs lots of flavour.

for 1 serving:

soba noodles, cooked according to the package instructions

miso sesame tofu:

1 tbsp sesame oil

1 tsp miso paste

splash of soy sauce

black pepper to taste

sesame seeds

cucumber and carrot, julienned or thinly sliced

tahini orange sauce:

1 heaping tbsp tahini

1 tbsp soy sauce

juice from 1/2 orange

grated ginger (i grate 40x with a microplane)

black pepper to taste

toppings: fresh parsley, pickled red onions and sesame seeds

method:

coat a block of tofu in the miso sesame marinade. ideally, leave in the for a few hours or overnight. bake at 210°C for 20 minutes, until deeply golden brown.

in the meantime, cook the soba noodles according to the package instructions. drain and rinse.

peel the carrot and cucumber with a julienne peeler.

combine the dressing in a small bowl. add splashes of water if needed.

mix veggies with the cooked soba noodles and 3/4 of the tahini sauce.

assemble the salad starting with the soba noodle and veggie mix, tofu, extra sauce and toppings.
