hummus & roasted carrot bowl
this bowl feels super fancy, but is very easy to make and so yummy.
big dollop of hummus
small handful of arugula
cooked (wild) rice
miso sesame tofu:
1 block (200g) tofu
1 tbsp sesame oil or olive oil
1 tbsp miso paste
pinch of salt & pepper
1 tbsp sesame seeds
roasted carrots:
2 small / 1 large carrots, quartered lengthwise
1 tsp maple syrup
1/2 tbsp olive oil
big pinch of salt
1 tsp dried rosemary
pickled red onions
tahin spice / smoked paprika
fresh parsley
olive oil & lemon juice
method:
marinate the tofu, ideally for a few hours. marinade the carrots and bake on the same tray as the tofu at 200°C for 20 minutes.
in the meantime, assemble the bowl with a big scoop of hummus, arugula and rice. add the baked tofu and carrots, the toppings and finish with a drizzle of olive oil and lemon juice.
