grapefruit cardamom syrup

for 1 jar:

400ml grapefruit juice (or orange juice)

75g white sugar

1/4 cup honey or maple syrup

1 tsp cardamom seeds

1/2 tsp salt

method:

grind the cardamom pods finely using a mortar & pestle.

into a small pot, add all of the listed ingredients. bring to a simmer, whisking occasionally.

after 10 minutes, the liquid should have thickened up. keep the pot on the heat until you have reached your desired consistency, keeping in mind that the syrup will thicken once cooled.

transfer to a jar and cool before storing in the fridge.

if the syrup gets too thick, dilute with some hot water as needed.

great with porridge, yogurt bowls, pancakes, mocktails…
