chickpea smash toastie
this is such a good toastie. the filling can easily be doubled or tripled for meal prep.
for 1 serving:
1 large onion
2 cloves of garlic, minced
1 tsp sugar
pinch of salt and oregano
200g chickpeas
1 tbsp tahini
1 tbsp nutritional yeast
water, if needed
2 slices of bread, preferably crusty
method:
slice the onion and add to a small pan with oil, sugar and a big pinch of salt. caramelise for 10-ish minutes, until deeply golden brown. add the garlic and fry for 2 more minutes, then add both to a food processor (or bowl).
add the remaining filling ingredients and pulse a few times. if using a bowl, mash the chickpeas with a fork. you want some chunks in there, so don’t overmix.
onto the bread, add mustard, mayo, or whatever spread you like and pile on the chickpea mash. if you want, you can heat it in a sandwich press for a few minutes.
delicious with a side salad and lots of balsamic for dipping.
