apple bread

for one 21/23cm loaf:

365g apple butter

80g neutral oil

80g plant-based milk

1 tbsp apple cider vinegar

1 tsp vanilla

50g coconut sugar

230g wheat flour

50g rye flour

1 tsp baking powder

1 tsp baking soda

big pinch of salt

75g walnuts, chopped

method:

preheat the oven to 180°C.

in a large bowl, mix apple butter, oil, milk, vinegar until well incorporated. add the remaining ingredients except the walnuts and fold in until roughly combined. add the walnuts and mix until there’s no flour left, but do not over-mix.

pour the batter into a 21/23cm loaf pan, shake the pan around to distribute the batter and sprinkle some extra coconut sugar on top.

bake for 55-60 minutes. cool completely before slicing.
